Pig's trotters with preserved plums: how to eat to keep beautiful in winter

raw material:

Pork knuckle, plum, onion, ginger, star anise, cooking wine, rock sugar, dark soy sauce, salt

practice:

1. Soak the pig's trotter in clean water for 10 minutes, then rinse with running water and cut into small pieces.

2. Put it in cold water, cook for 2 minutes after the water boils, then remove from the pot, rinse and drain, and set aside.

3. Put a small amount of oil in the pot and add rock sugar. When the pot is hot, the sugar turns brown.

4. At this time, add the pig's trotters in time and stir-fry quickly so that the pig's trotters are evenly coated with sugar color. Add soy sauce and cooking wine and continue to stir-fry.

5. Add onion and ginger and stir-fry evenly, then add water to cover the surface of the pig's trotter.

6. Add the plums, bring the water to a boil, then simmer on low heat for 1 hour, until the pig's trotters are soft and tender, then increase the heat to reduce the soup until it is concentrated.

Nutritional Analysis:

1. The collagen protein in pig's trotters can be converted into gelatin during the cooking process. It can bind a lot of water, thereby effectively improving the body's physiological functions and the water storage function of skin tissue cells, preventing premature wrinkles on the skin and delaying skin aging;

2. Pig's trotters have a certain auxiliary effect on patients with frequent limb fatigue, leg cramps, numbness, gastrointestinal bleeding, hemorrhagic shock and ischemic encephalopathy. It also helps the growth and development of adolescents and slows down the rate of osteoporosis in middle-aged and elderly women.

3. Pig's trotters are rich in collagen, which can promote hair growth, prevent progressive muscular dystrophy, improve coronary heart disease and cerebrovascular disease, and have a certain effect on gastrointestinal bleeding and dehydration shock.

Additional information:

It is not advisable to eat pig's trotters before going to bed to avoid increasing blood viscosity; because the cholesterol content in pig's trotters is high, children with weakened gastrointestinal digestion function should not eat too much at one time;

Tips:

1. If there are a lot of pig hairs, you can use rosin. Melt the rosin first, and then pour it on the pig hairs while it is hot. When the rosin cools down, peel it off, and the pig hairs will fall off with it.

2. Wash the pig's trotters, boil them in boiling water until the skin swells, then take them out and remove the hair with pliers, which saves effort and time.
