3. Mix the shrimp paste thoroughly and put it into the piping bag.

4. After the shrimp oil is boiled, add water to the shrimp shells and boil for more than ten minutes. Add the winter melon and cook until soft. Add salt to taste and continue cooking until the winter melon is well-seasoned. PS: The winter melon must be cooked completely soft and well-flavored, and the steaming time should be very short. You can also use other broths, the winter melon cooked in the broth will be fresh and refreshing.

5. Place the cooked winter melon on a plate and squeeze the shrimp paste on it (I used a chrysanthemum mouth).

6. After the water in the pot boils, steam the shrimp for about 3 minutes until the shrimp paste changes color completely. If you want to be more particular, you can use the soup from cooking winter melon to thicken the dish and pour it on top to make the color more beautiful.
